Manam SM City Baguio


The first Manam branch outside greater Manila is finally open. The Moment Group introduces its beloved classics & twists to the dining scene of the City of Pines. Manam promises to bring its home-grown Comfort Filipino restaurant to all the people of Baguio.

Manam, The Moment Group’s Filipino concept, has always dreamed of extending its brand of Comfort Filipino dining and hospitality to more diners around the country. After an eventful 2019, which saw the restaurant launch nine new locations spanning the north and south of Metro Manila (rounding up its total shopcount to 15 by the end of the year), and its first regional opening in SM City Bacoor last January, Manam is raring to celebrate yet another milestone: its first shop outside the Greater Manila Area, Manam in SM City Baguio, which opens its doors officially on March 12, 2020. “It has always been on our minds to try and be part of the Baguio dining scene, which has produced its own great local concepts over the years. It’s quite an honor for Manam to be part of this new neighborhood,” says Moment co-founder Jon Syjuco.


A PLACE TO DISCOVER SUPER PABORITOS

Locals and visitors of Baguio alike will find plenty to enjoy at the new Manam shop, with its supersized menu of distinctly Filipino flavors, presented in two major parts: Classics and Twists. Classics, which lists traditional and familiar dishes, include the crunchy and creamy House Crispy Sisig, a Manam staple that has been hailed by some as the “Best in Manila”. There’s also Gising Gising, a crowd favorite vegetable dish featuring a crunchy mix of sigarilyas, kangkong, and pork chunks in a semi-spicy sauce made of bagoong, chilis, and coconut cream. Other must-tries include Manam’s renditions of the recipes we all grew up with, such as the saucy Kare-Kare with Oxtail and the flavorful Crispy Pata.

Twists, on the other hand, features reinvented takes on recognizable flavors, such as the Sinigang na Beef Short Rib and Watermelon, which bits of watermelon that lend a mild sweetness to the traditionally sour broth. This side of the Manam menu also includes the famous Ube + Sago Pampalamig, a tasty shake made with purple yam, coconut cream, and chewy tapioca pearls that makes a great companion to any of Manam’s ulams, but also a delicious dessert that can be taken on its own. Not to be missed is the Crispy Pancit Palabok, Manam’s innovative take on the classic noodle dish, made of crunchy glass noodles that “melt” when doused with hot, thick, classic palabok shrimp sauce. It’s a dish that’s become a favorite among diners not only for its flavor, but also for its unique presentation—it’s gained popularity on social media and has even been featured in New York City-based online publication, Insider.

Save for its selection of Pampalamigs or shakes, Manam’s crowd paboritos, along with all the other items on its menu, are available in three sizes (small, medium, and large), so there’s sure to be a serving fit for every party size, from solo diners to large groups and families. Additionally, these dishes will be available for delivery via foodpanda.

AN ODE TO LOCAL 

Apart from introducing its beloved classics and twists to the dining public in both Baguio and its surrounding communities, the new Manam shop also serves two new dishes inspired by the iconic flavors of the region.

The Manam Etag Fried Rice

Etag Fried Rice celebrates the smoked and salty tastes of the pork meat that’s traditionally cured, aged, and air-dried for weeks in the Cordilleras. 

The Mountain Coffee Shake

Meanwhile, the Mountain Coffee Shake highlights the fruity and nutty notes of Arabica coffee beans from Atok, Benguet. Blended with ice, and mixed with coffee jelly, whipped cream, and coffee syrup, it’s an energizing beverage that diners can enjoy any time of day, whether on its own, with a meal, or as a dessert.

Both of these dishes will be offered for a limited-time across all Manam shops, but will be mainstays in Manam SM City Baguio’s menu. Entering a location outside of Manila also gives Manam the opportunity to collaborate more closely with local farmers, and proudly make use of locally-sourced ingredients adding a further twist that is also a tribute to Manam's new Baguio community. “We respect the unique ingredients offered by the locales we tap, so we want to have something on Manam’s regional menus to honor that. We’re also excited to bring them our own menu, which has our take on cuisines from around the country,” says Moment co-founder Abba Napa.
